Four kitchens, and what each one is for

One cooks the region, one cooks its own garden, one feeds a schedule, and one answers the phone at midnight.

Club House has a restaurant that fills at weekends, and downstairs the kitchen cooks the region properly rather than apologising for it. That is a specific claim and worth making. A hotel kitchen in Punjab can very easily serve a menu that would pass unnoticed in an airport lounge anywhere on earth, and plenty of them do.

Highway Huts works farm-to-table from the gardens on the property, and serves it in a glazed dining pavilion at one end of the row of cabins. The distance between where the food is grown and where it is eaten is about as short as a hotel can arrange.

Northwind is the most ordinary of the four in this respect, and that is the point. There is a restaurant and a bar downstairs, a coffee shop, and breakfast every day with continental, vegetarian and vegan options. The house is built for somebody checking in late and leaving early, and the kitchen is built for the same person.

Hotel Dream Majestic does not lead with its food. Room service runs around the clock, which in a three-star built for business travel is the part that actually gets used.
